Early in their relationship, Beth told Derek she had come up with their “Amazing Race” team name.* The first two letters of his name + the last two letters of her name = Deth. Given that he is a long-time monster kid and she is a haunted house designer, Team Deth just made sense (much like how Derek and Beth becoming a couple and a team just made sense).

Team Deth is the name of their production company, and the name they use for all their various media and content creation-related projects.
